Masters Bread Class
- Andrew Pollock (former General Manager of Tucson Country
Club and Garden of the Gods) will share his Master Bread recipe
with a maximum of 15 students taking them through the steps
of 1) starter refreshment, 2) mixing the dough, 3) shaping the
loaves, 4) baking the loaves.
Andrew's starter is 17 years old made from organic unbleached
bread flour and unsulfured and unsprayed wine grapes. The starter,
affectionately called 'Bambino', is based on Steve Sullivan's
recipe for Levain Bread in Chez Panisse Cooking.
Students will receive recipe handouts and their own starter
to take home.
At the conclusion of class we will enjoy a family-style supper
of Soupe au Pistou accompanied by wine and freshly baked Levain
Bread.
