Masters Bread Class - Andrew Pollock (former General Manager of Tucson Country Club and Garden of the Gods) will share his Master Bread recipe with a maximum of 15 students taking them through the steps of 1) starter refreshment, 2) mixing the dough, 3) shaping the loaves, 4) baking the loaves.

Andrew's starter is 17 years old made from organic unbleached bread flour and unsulfured and unsprayed wine grapes. The starter, affectionately called 'Bambino', is based on Steve Sullivan's recipe for Levain Bread in Chez Panisse Cooking. Students will receive recipe handouts and their own starter to take home.

At the conclusion of class we will enjoy a family-style supper of Soupe au Pistou accompanied by wine and freshly baked Levain Bread.

June 15 Terra Madre Delegates - Delegates will be notified of acceptance by Slow Food USA. Local (Tucson and community) Delegates chosen for Terra Madre can apply for one of two $1500 travel grants from Slow Food Tucson for Terra Madre. Once you are notified of acceptance from Slow Food USA, forward your (1) application, (2) acceptance letter and (3) an essay stating your reasons for applying for support to slowfoodtucson@yahoo.com. The deadline for grant applications to Slow Food Tucson is Friday, July 2. Notification of awards will be made July 15. Terra Madre will be held October 21-25 in Torino, Italy.
June 27, 9am Chef Albert Hall of Acacia, Marketplace at Acacia and Tohono Chul Tea Room will walk through the Sunday farmers market collecting a variety of fresh ingredients that he will assemble into a quick, delicious dish right there on the patio of Acacia at St Philips.
